In early November, when Autumn had really started to get its act together it was time to taste through the wines with a view to getting onto the next stage.
The Moscato had been in the tank on the skins for months by then, but we had the luxury of being able to taste it regularly as the tank had taps on. The Barbera however had been sealed up in barrel and had been inaccessible for weeks, so the opening up of the barrels was a exciting moment.
Both wines were in tip top condition, so into the traditional basket press they went.
After gentle pressing both wines have been put into stainless steel tanks to settle over the winter. We will rack them off the gross lees a couple of times before we bottle towards the end of January, but that will be the limit of our interventions.
